Eat: Apple Brie Turnovers

So you may have heard of this new site Pinterest – it’s supposedly popular?? ;)

I use it primarily for capturing recipes (i.e. desserts) and fashion inspirations. I decided to try this recipe I pinned on Pintrerest for a not-so-recent Oscars watch party, as parties are my favorite time to try new recipes.

Ingredients:

1 box (2 sheets) of puff pastry, thawed
1 green apple
1 Tbsp brown sugar, divided
1 Tbsp butter, divided
1/4 tsp cinnamon, divided
1 medium wedge of brie
1 egg
flour (for rolling)

Directions:

Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.

Unfold 1 sheet of puff pastry onto a lightly floured board and roll it slightly with a floured rolling pin until it’s a 10 by 10-inch square. Cut the sheet into quarters with a sharp knife. Place a good-sized slice of brie and 3 or 4 this slices of apple the middle of each of the 4 squares. Sprinkle apples with cinnamon and brown sugar and top with a pat of butter.

Brush the border of each pastry with egg wash and fold 2 opposite corners to the center, brushing and overlapping the corners of each pastry so they firmly stick together. Brush the top of the pastries with egg wash. Place the pastries on the prepared sheet pan. Repeat with the second sheet of puff pastry.


Bake the pastries for about 20 minutes, rotating the pan once during baking, until puffed and brown. Serve warm

The Verdict:

*I don’t think I let them cook long enough, after 20 minutes they look brown and puffy but they ended up greasy and too doughy on the bottom

*The flavor wasn’t great – I think additional cinnamon and sugar would have helped

*Don’t overfill – the cheese WILL pour out while cooking

I don’t think I will make this exact recipe again, maybe consider crescent roles or additional fillings (jam?) to add some more kick.

Read: For the summer…

I finally got myself an e-reader and well, I’m obsessed. I’ve been on a mission, it seems, to read read read.

A brief listing and thoughts in one sentence or less:

  • The Hunger Games (all three) – targeted for teens but what I can say? I read all three in a week and can’t wait for the movies

  • The Help – totally worth the hype – I plan to read it again

  • Girl in Translation – this sat in my Amazon.com cart for about a year, I wish I would have read it earlier. It was so enjoyable!
  • Same Kind of Different As Me – the true story of a beautiful relationship built between two people you would never put together, service and God’s love

  • It’s Not Just Who You Know – after hearing the author speak I was interested in reading his book, while the principles were great, it was far too lengthy with excessive words for my taste…
  • Onward – the new book by Howard Schultz of Starbucks, this took me a while to get through but the insider point of view was fascinating.

Any suggestions on books? I’ve made my way through my current wishlist and am lacking in inspiration.

Go: A lot…

The past few months have been full of trips, adventures and lots of entertainment…

April brought:

*a trip to Aspen to see the awesome Matt Nathanson

*a girls trip to Kansas City to see my Grandma (we loved the Lady Di exhibit downtown and of course some ‘dirt and worms’ afternoon snack)

In May:

*a weekend in San Diego with the bestie (great weather, a Padres game, quality sushi and fish’n'chips)

*Haunted tour in Estes Park (luckily we did not encounter any unwanted guests during our overnight stay at the Stanley Hotel)

June continued the trend:

*Visiting an old favorite – Long Beach

*A HOT weekend in Vegas (Love, Rihanna, pool time and adult beverages)

Still ahead – a trip to NYC and much much more!

Eat: Sometimes you just need something sweet

I’ve always had quite the sweet tooth, in fact, as far as I am concerned, a dessert a day is a must.

Lately, I’ve tried a few new things, a twist or two on ingredients I already love…

1. Nutella and roasted marshmallow milkshakes (thank you HBurger!)

This picture is from H Burger – mine didn’t turn out quite as pretty but it sure was delicious

(Vanilla ice cream, milk, chocolate syrup and nutella, blended. Add marshmallows to the top (roasted for an extra bonus))

2. Mini Ice Cream Sandwiches

These were perhaps the easiest and quickest:

(Grab and break chocolate chip cookie dough (mini-sized) and vanilla ice cream)

3. Ice Cream Balls (for lack of a better name)

These are a total crowd pleaser…mmmm

(Oreos (smashed), vanilla ice cream and nutella – mix, form into balls and freeze)

4. Green tea Mochi

Confession: I didn’t make these, but they were too pretty not to share.

Go: A Mountain Adventure in Copper

Having been born and raised in Colorado, it’s surprising to some (at least until they get to know me) the minimal exposure I have to all Colorado has to offer. And so, when the opportunity came for a girls weekend up in the mountains I quickly agreed.

We started out the day snowshoeing, Meagan found a nice little snow cave to hang out in 

As we continued on we ran into another group of hikers who told us about a big rock not too far away. Legend says that all who walk around the rock in a circle and then end it with a kiss will have good luck for a year. We, of course, all had to try it.

So here’s hoping to lots of luck to come our way… ;)

After snowshoeing came tubing, here we are before our first run down the mountain. We were too busy rushing to get to our next run to stop and take any more pictures.

Tips for a successful tubing outing: don’t use the 2-person intertube, it’s far too slow; don’t wait around trying to make a 30 person train, it will end up breaking apart and you could have fit in an extra run in the extra time; wear goggles if you plan to have any fun at all and well, don’t b afraid of going fast.

Just in time to call it a day, the snow began to fall…

And so we finished off our day the only way we know how – “hot chocolate,” hot-tub and hot chili. It was a good weekend indeed.

Eat: Crockpot Creations

So here’s the thing about my crockpot, I asked for one for Christmas and Santa generously granted this request…in 2009. Yep, that’s right, the thing sat in my cabinet for more than a year before I got around to using it. In the past 2 weeks I’ve used it twice.

1. Chicken Tortilla soup

I got the recipe at  http://allrecipes.com//Recipe/chicken-tortilla-soup-i/Detail.aspx

I made a few minor adjustments to recipe to include avocado and tortilla chips. Yum. The soup in itself could have used a bit more kick (which can be easily remedied through the amount of spices and/or addition of Tabasco). The above shows an enjoyable lunch at my desk :)

2. Roast

My mom used to make roast with potatoes and carrots and I always remember coming home from church to the smell of roast throughout the whole house.  I sort of made up my own recipe as inspired by the internet and what I could remember watching my mom toss in. The picture doesn’t do it justice to just how delicious it was. There is the roast, potatoes and carrots and a glaze of sorts made from ketchup, dijon mustard, garlic and gravy mix. The aroma made it all the way into the hall, I’m sure my neighbors were jealous.

And so begins my obsession with my crockpot. What are your favorite crock pot recipes? I’m eager to try more!

Eat: Chicken Pot Pies and “Candy” Soup

My roommate and I recently decided to try a few new recipes, one straight out of Martha Stewart and one lovingly called “candy soup” by my six-year-old nephew.

1. Individual Chicken Pot Pies

The recipe itself was pretty simple, the prep work was much more involved. There was a lot of chopping and sautéing.

The pot pies were good but not overly flavorful. I would probably alter the veggies next time to include a little bit more color and flavor.

2. Candy Soup

Now candy soup is actually turkey chili, the catchy title comes from these two cuties:

The mad scientist featured above says the chili is “better than candy.” My verdict? Yummy.

Add in some cornbread and you’ve got a delicious meal. We had a minor mishap with the cornbread when I realized I didn’t have any milk. Luckily, I had some heavy cream left over from the pot pies, which, combined with some water, yielded a similar result.  Half the fun of cooking is when you get a little creative :)
