I’m pretty sure if I could do anything, it would be bake, all the time. I love trying new recipes and look for any chance I can to make something sweet and delicious. The excuse this time? Fourth of July BBQ. The recipe: chocolate surprise cookies. On my igoogle homepage is the Martha Stewart “cookie of the day” app, my source of inspiration. I rarely make the same recipe twice (with the exception of my famous chocolate chip cookies) so I have numerous recipes in the mix. The recipe was quite easy, and the cookies? Delicious!
I just recently upgraded to this measuring cup, you can look from the top as you pour – glorious!
Mix the soft ingredients and then the powdered ones. The mixer? A Christmas gift, and wow has this changed how I bake – so quick and everything comes out smooth and consistent. (Don’t you just want to like the batter??)
After plopping them into the oven comes the “surprise”
About 8 minutes into baking, add half a marshmallow into the slightly baked cookies. (The recipe called for 10 minutes but I found the marshmallows squished better when the cookies were slightly less baked) I also put a layer of graham cracker crumbs underneath the marshmallow (I’m on a s’more kick). However, I think I would have mixed the graham crackers into the dough to add some more flavor/texture.
After the bake about 2 more minutes (the marshmallows brown as if you were roasting them over a fire) take them out to cool. The final step – a dab of chocolate frosting to create the “surprise.” – it covers the marshmallow, creating mystery!
The verdict? Delicious! They were soft, not too chocolatey and the marshmallow added a fun, chewy element. I just finished the last cookie for dinner tonight, they didn’t last long!
