So here’s the thing about my crockpot, I asked for one for Christmas and Santa generously granted this request…in 2009. Yep, that’s right, the thing sat in my cabinet for more than a year before I got around to using it. In the past 2 weeks I’ve used it twice.
1. Chicken Tortilla soup

I made a few minor adjustments to recipe to include avocado and tortilla chips. Yum. The soup in itself could have used a bit more kick (which can be easily remedied through the amount of spices and/or addition of Tabasco). The above shows an enjoyable lunch at my desk
My mom used to make roast with potatoes and carrots and I always remember coming home from church to the smell of roast throughout the whole house. I sort of made up my own recipe as inspired by the internet and what I could remember watching my mom toss in. The picture doesn’t do it justice to just how delicious it was. There is the roast, potatoes and carrots and a glaze of sorts made from ketchup, dijon mustard, garlic and gravy mix. The aroma made it all the way into the hall, I’m sure my neighbors were jealous.
And so begins my obsession with my crockpot. What are your favorite crock pot recipes? I’m eager to try more!
